Ingredients
1 med onion, finely chopped
2 cloves garlic, crushed
1 tbl olive oil
1 tbl fresh herbs, finely chopped (2 tsp dried)
1 small zucchini (or carrot), quartered and finely sliced
1 med red capsicum, finely cubed
1 cup small button mushrooms, sliced
4 med tomatoes, chopped (or 1 can)
2 tblsp tomato paste
300gr Sanitarium veggie mince*
1 cup water with 1 veggie stock cube
1 glug red wine (optional)
salt & pepper to taste
80gms pasta per person
Method
- Saute onion in olive oil until golden.
- Add garlic and herbs (whatever herbs you prefer) and stir for a few minutes.
- Add zucchini (or carrot), capsicum and mushrooms and saute for 5 minutes.
- Add the mince, then tomatoes, tomato paste and pepper. Mix well.
- Add the stock -- if adding wine reduce the amount of water accordingly.
- Simmer uncovered while pasta is cooking to reduce the liquid.
- Heat water and cook pasta according to instructions on packet (amount depends on hunger of people). When soft, mix with the mince sauce and serve.
- Can be served with Italian bread and a salad.
- Serves 4
Note that Sanitarium makes veggie mince in the Veggie Delights range in the chiller as well as canned cassarole mince. It is low in fat and high in protein.
