Cashew cream

Make a cream which is not only delicious but also healthier than dairy cream.

1 cup raw cashews, cover with water and stand in the fridge for 24 hours. Discard the water and add fresh water to just cover. Place in the blender for about 5 minutes until a smooth cream is formed.

  • The cream keeps for a few days in the fridge, but is best fresh, so make small quantities as required.
  • You can adjust the thickness of the cream depending on how much water you add.
  • The cream can be used on sweets (eg fruit salad) or savory (eg baked potatoes).
