Fruit curry (for 4)

2 onions, chopped
2 tsp curry powder
1 tsp ginger root, finely chopped
2 tart apples, peeled and cubed
2 bananas, thickly sliced
2 slices fresh pineapple (~200 gr), diced
1 small paw paw (~400 gr), diced
2 tbl desiccated coconut
4 tbl sultanas
juice of 1/2 lemon

Cut up all the fruit and combine with lemon juice.

Saute the onion in some margarine until golden. Add the curry powder and ginger for a few minutes.

Add all remaining ingredients and simmer gently for 20 mins. Add a little water if necessary.

Dhal with tomatoes (for 4)

1 cup brown lentils
2 tsp curry powder
4 tomatoes, peeled and chopped 2 onions, chopped
1 tsp mustard powder
2 cloves garlic, crushed
2 tsp sweet paprika
3 cups water with 1 tsp vegemite

Combine lentils, curry, tomatoes and onions with water and simmer until lentils are tender.

Add mustard, garlic and paprika and simmer for a further 10 minutes

Serve the dhal and fruit curry on rice.
