Curried lentils and spinach (for 4)

1 cup brown lentils
1 onion, chopped
3 cloves garlic, crushed
1 bunch spinach leaves (~500 gr), chopped
500 gr tomatoes, peeled and chopped
2 tbl tomato paste
2 tsp curry powder
2 tsp ginger root, finely chopped
1/2 tsp nutmeg
1/2 tsp cinnamon
1 cup water

Saute the onion in a little oil for 5 minutes. Add the ginger, garlic and spices.

Stir in the chopped spinach leaves until wilted.

Add all the remaining ingredients and gently simmer until the lentils are soft. Serve on rice.
