Sweet spiced tofu (for 4)
1 large onion, chopped
375 gr tofu, cubed
3 cloves garlic, crushed
2 tsp ginger root, finely chopped
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
dash sweet chilli sauce (to taste)
4-5 tomatoes, peeled and chopped
1 tbl tomato paste
300 gr cauliflower, cut into flowerets
400 gr peas
1 and 1/2 cups fragrant rice (cook)
Saute the onion for about 5 minutes. Add the tofu, garlic, ginger and spices for a few minutes, then add the tomatoes and tomato paste.
Add the vegetables and gently simmer. Cook until the vegetables are tender.
Serve over fragrant rice.
